    The wine has pale ruby colour with red fruit, mulberry and chocolate on the nose. The taste is well-balanced, with a hint of well-integrated oak. The wine has aged 12 months in new oak barrels. The Legend “A poor woman named Ilaya lived alone with her young son during khan Krum`s reign. A vine grew near their house. She gathered the grapes and hid them in a pot near the fireplace. One day Ilaya was surprised to find that she had made wine from the grapes. She gave it to the boy and he grew healthy and strong. Khan Krum had lions, which he used for guarding the capital during the night. One morning one of the animals was found dead. Krum announced that the man who admitted wоuld receive a reward. Only Ilaya`s son admitted for his bravery. The boy told how he was brought with wine, which gave him this exceptional power. Krum ordered the new vineyards for the country to be replanted from the vine.     Pure varietal Chardonnay from own grapes, fermented and aged in new french oak barrels for 6 months. The wine has an intensive gold color, elegant and complex nose with hints of butter, nuts and sweet vanila. Full body with pleasant freshness. Vinification: Carefully selected hand-picked grapes in crates with subsequent processing at appropriate temperatures. Once selected during picking, the grapes are reselected in sorting tables, the barries are separated from the stems and pressed in pneumatic press after short maceration at low temperature. Fermentation in French oak barrels and maturation in the same barrels for 6 months with subsequently bottle aging for couple of months. Wine&Food: Nice match with dishes unfolding extra degree of richness. Seafood: fine rich fish such as turbot, roast shellfish like lobster and scallops.     Katarzyna Mavrud is a wine made with great care and aspiration to get a high quality product of Bulgarian variety, which is becoming more and more interesting among the world wine critics. The grapes are picked manually in cassettes and carefully selected. Before processing, the grapes are refrigerated for about 20 hours. This is followed by sorting by sorting lines, ronching, re-sorting and crushing. Alcoholic fermentation is carried out in French oak barrels of 400l each for 70% of the batch, while alcoholic fermentation is carried out in stainless steel fermenters of 10m3 and 15m3 for the remaining 30%. The technological process includes infusion of grape mash at 7-10˚C, 7 to 10 days, fermentation at 27-29˚C from 7 to 9 days and subsequent maceration with solids up to 6 days at 26-28˚C . For lactic acid fermentation, the wine was transferred to French oak barrels of 225l each. 100% of the blend matures in oak barrels for 10 months. The wine is characterized by a deep red color with violet hues. The aroma of the wine is a tangle of red and black fruits, spices and noble French oak. The taste of the wine is juicy, moderate and with incredible elegance and balance. The taste aroma fully corresponds with the aromatic profile. The wine finish is fine and long lasting.     The specificity of this wine is that the different grape varieties are selected from different parts of our array, respectively, there are a large number of varieties of cinnamon-forest soils and a relatively large range in the altitude of 120-160m.
